I am Chef Babis Vitalakis
and this is my story

A dream that came true

My name is Charalampos (Babis) Vitalakis, I was born in Plakias, Crete and ever since I was young child my dream was to become a chef. I always enjoyed mixing and matching different ingredients while cooking and that is how I discovered my passion for creating beautiful gastronomic experiences for people.

Once i finished school and completed my military obligations i moved from Crete to Athens in order to pursue my childhood dream and become a chef. The 2 years i spend in Athens i studied in Le Monde Institute one of the most prestigious colleges in Greece and graduated with excellence with a 9.8/10 grade. There i discovered my passion further since i got to study and understand more about european and international cousines while also how high end restaurants and hotels operate when it comes to fine dining, so it was at that moment i knew that that was the place were i belonged, among the best of the best, and that is exactly what i did.

After a few years of working and gaining experience in Crete i decided to take a leap of faith and try working for the first time in Europe. My first experience abroad happened a few years ago were i started working in 4* hotel in Switzerland and despite the difficult years of the Corona Virus and with everyone in lockdowns, doors all over the world were open for me. That is how i ended up working in Bordeaux, France and more particularly in a Michelin Guide Hotel, member of Relais & Chateux with a menu on fine dining. After that my next stop was Belgium were things started getting even more demanding since the Restaurant de Pastorale which i worked for was a 2* Michelin Star, Relais & Chateux, Grand Tables du Monde. And then came Switzerland with another Michelin Guide Restaurant, Swiss Deluxe Hotels before continuing my career in Nice, France at Chateau Saint Martin, 1* Michelin Star Restaurant, Leading Hotels of the World. During my last adventure and even though I had the opportunity to work in one of the 5 best hotels in Switzerland, the Tschuggen 6*, I preferred to work in another hotel of the same group of companies in order to find the time to design, create and envision my future.

That was were i decided to return back home and work as a private chef, full time in Greece close to my family and friends, doing the profession that I love and using ingredients and flavours that you can't easily find elsewhere. My goal is to create unique food experiences for every customer that differs from the classics, and makes them feel good both in taste and appearance tuned with a bistronomic-fine dining approach and presented as art pieces.
